Butter chicken:
Making a South African Butter Chicken Curry dish from scratch is an art, a practiced craft. But well worth the effort involved. Once mastering these dishes, this could become your signature dinner party dish or treat?.
This recipe has been tried and tested, perfected in house with our chefs and created with a classic twist. Our spices are hand selected from the finest of spice mixers. We take pride in catering the best dishes. It’s delicious and easy to make. This, could become your new weekly favorite dish.
Butter chicken curry method:
In a bowl add your chicken breast, yoghurt plain is best, lemon juice, tomato paste, garlic and ginger. Add all your spices and salt and whole chillies or crushed.
Take a spoon and mix everything together by hand. Cover with cling film or parchment and marinade for a few hours or overnight.
In a heated pot on high heat add the oil and onions chopped finely, fry until golden brown.
Add a cup of warm water and cook the onions until all water has cooked away.
Add your chicken mix with any leftover marinade in bowl and add that to pot as well in stages.
Cook on medium heat, stirring occasionally. Try keep the heat regulated.
Chefs tip, whatever you do, do not add any water to the curry.
Cook until chicken is tender, 16-22 minutes.
Add cream and a bunch of coriander.
Chefs notes:
If your curry sauce is a bit watery, mix a tablespoon of corn flour with a little water and stir into curry. This should leave you with a saucy thick dish that can coat rice or other starches with ease and perfection.
